Vent: I was packing brown sugar wrong for 8 years and a $2 terra cotta disk tipped me off
I keep a baking journal and flipped back through it a few weeks ago and saw the same note over and over: cookies go flat, cookies go flat. Then it hit me. I had been scooping brown sugar out of the bag and leaving the rest wide open in the pantry, so by the time I baked, it was dry as sand and my dough never had the moisture it needed. A baker at the Saturday market in Boise saw me digging at a rock hard bag and asked why I wasn't just dropping a terra cotta disk in there. Cost me $2 and now my brown sugar stays soft for 3 months instead of 3 days. My chocolate chip cookies held their shape for the first time since 2017. Has anyone else had a whole problem turn out to be one stupid tiny habit like that?
