My neighbor swears by wood chips, but I'm team chunks after my last pork shoulder.

Some say chips work fine, others swear by chunks, what's your take?

Wood chips burn way too fast for a long cook like that.

Try mixing in some hardwood chunks instead.

Oh for sure, that's why I always soak my chips first. I'll toss them in with the charcoal and it really slows things down.
