A retired butcher from Dublin told me my lamb breaking was backwards, and he was right
I was breaking down two lambs at my shop in Cleveland last week when a retired butcher named Eamon walked in to pick up his order. He watched me separate the shoulder from the breast for about 30 seconds, then told me I was losing 2 or 3 good chops off each side by working the seam in the wrong direction. I thought the old man was just nitpicking, but he took the knife and showed me how the grain actually runs, and the second side came apart in half the time with way less trim. I gave him a few pork chops for free and now I'm rethinking how I cut every rack. Anybody else here get schooled by an old timer on something they thought they had down?
