Hit 1,000 custom sausage links in one month, did not see that coming

I took over the sausage station at my shop in Portland back in February and just tallied up last month's numbers, 1,004 links with maybe 12 different seasoning blends. I figured I'd be doing maybe 600, but the breakfast links alone blew past that after a couple of local diners switched to me over their supplier. Has anyone else hit a number like that and realized you're either undercharging or overworking yourself?
