I finally stopped boning out whole chickens and switched to parting them first
For my first 3 years on the block I broke down every bird flat on the board, and my yield was always about 2 ounces light per chicken because I was nicking the breast meat chasing the wishbone. A rep from a processor in Grand Rapids showed me how to pop the joints and part it into 8 pieces before boning anything, and my yield went up right away. Do you part birds first or break them flat like I used to?
