Rant: my eggs kept sticking until the diner cook in Bakersfield told me to stop stirring them so much
I eat eggs almost every morning because they run me about 30 cents a serving, but for months they kept gluing themselves to my pan and I was scrubbing it for ten minutes after every breakfast. I tried everything I could think of, more butter, less heat, a brand new nonstick pan from the grocery outlet, and nothing worked. Then last month I was sitting at a counter diner in Bakersfield and watching the cook work, and I asked him why his eggs slid right out while mine turn into cement. He said I was messing with them too much, that you let them sit for a bit, then push them slow with a rubber spatula instead of stirring like you are making a cake. I tried it the next morning on the same cheap pan I almost threw out and the eggs came out soft and nothing stuck to the bottom. The whole thing cost me zero dollars, just a change in how I move the spatula. Anybody else got a cheap kitchen habit that was actually making things worse?
Oh man I heard about this on a cooking podcast a while back. They said the same thing, that moving eggs around too fast breaks them up and makes them stick, and you're supposed to let them set a little first. Wild that a diner cook just handed you the answer for free.
