KitchenAid mixer died mid-service on Valentine's Day and I finished the mousse by hand with a whisk
Last Saturday we had 68 covers booked for Valentine's Day and my 20 year old KitchenAid gave out right as I started whipping cream for the chocolate mousse. The motor made a smell like burnt toast and just quit. I grabbed a balloon whisk and whipped 4 quarts by hand in under 12 minutes while my line cook plated the entrees. My right arm was shaking for the rest of the night but we got every dessert out on time. Now I keep a backup mixer in the walk-in and I'm wondering if anyone else has a dead mixer story that saved their service.
Watched a buddy of mine lose his Hobart right in the middle of a Friday fish fry, and he finished 30 pounds of coleslaw by hand with a big plastic bowl and a spatula. Took him almost an hour and his shoulder was wrecked, but the tickets kept moving and nobody in the dining room knew a thing. Makes you respect the old ways a little, doesn't it?
