That fancy mandoline I mocked for 3 months is now my favorite tool

I bought a cheap plastic mandoline two years ago and hated it, blades dulled in a week, almost took my fingertip off. Last month I borrowed a friend's expensive stainless one with a hand guard and honestly laughed at the price tag... until I sliced 40 pounds of onions for a catering gig in under 20 minutes without crying or bleeding. The grip actually locks, the blade stays sharp after 15 washes, and I can adjust thickness without a screwdriver. Anyone else have a tool they trashed publicly then quietly started using every shift? What changed your mind about it, or did you stick with your old way?

And the same thing happened to me with my microplane. I ragged on them for years, said they were overpriced zesters for people with too much money. Then I did a batch of lemon curd for a brunch pop-up and grated like 30 lemons in five minutes. The cheap one I had before would have taken an hour and wore out my wrist. Now I grab it for garlic, ginger, hard cheese, everything. It's the one tool I will replace the second it dulls, no questions asked. Feels stupid to admit it after all the trash I talked, but the good stuff really does work different.
