Just found out my great grandma's pie recipe uses lard, not butter

I always thought hers was a butter crust but my aunt told me yesterday she used lard from the butcher shop down the street... blew my mind since mine never turned out flaky like hers. Anybody else have a secret ingredient in an old family recipe that surprised you?

That lard from the butcher shop makes me wonder what kind of fat they rendered it from. Was it leaf lard from around the kidneys or just regular back fat? I've heard leaf lard gives the flakiest crusts but it's harder to find nowadays. Did your aunt happen to mention if great grandma saved the drippings from her own cooking or if she bought it fresh every week?
