Vent: My shop's pork belly yield went up 15% after we switched to a new supplier in Des Moines.

For about a year, we were getting bellies from our old vendor that were just too thin, maybe averaging 1.5 inches. We switched to a new farm six months ago, and their bellies are consistently over 2 inches thick. The extra fat cap means way less trim waste when we're squaring them up for bacon. Anyone else seen a big jump in yield just from changing where you source a specific cut?

TIL a $75 fabric swatch book was the best money I ever spent

I was designing a spring line and almost ordered 50 yards of this linen blend based on a tiny online photo, but my mentor said to get the actual swatch book first. The color in real life was totally wrong, a weird greenish tint that would have ruined the whole collection. Has anyone else had a close call like that with color matching?

Back when we'd stop for pie at the diner after a muddy day

I mean, idk, maybe it's just me, but I think about this a lot. When I first ran a dredge upstate, the crew would head to this little diner near the site. The owner knew our names and always had pie ready. We'd chat with the regulars, some of them farmers who'd ask about the river levels. Now, with tight deadlines and prepackaged meals, we just eat in the truck. Those connections felt good, like we were part of something bigger. Last year, I drove through that town and the diner was gone, replaced by a chain store. It hit me how much has changed.

Tbh, it's wild how much we just accept the fresh is best idea without question. I made the same switch last year and the difference in my kitchen trash is honestly shocking. Once you see one part of the system, you start seeing the whole cycle of buy, waste, repeat. Honestly, breaking that cycle even a little feels like a real win.
