Why do so many recreations ignore the original paint colors?

I was reading about the Parthenon marbles restoration last week and found out the statues were actually painted bright red and blue, not white marble like every museum display I've seen. Are we just stuck on the clean look because it's prettier, or is there a technical reason we can't reproduce the originals accurately?
