I finally looked up how much sugar is in a real New York cheesecake
I was trying to copy a recipe from Junior's in Brooklyn and the article said their classic slice has 52 grams of sugar. That's more than a can of soda! I always thought the sour cream topping was the heavy part, but nope, it's all in the filling. Has anyone else cut the sugar in a cheesecake recipe without ruining the texture?

Ever try swapping some of the sugar for a pinch of salt? It sounds weird but it makes the sweet flavor you do have seem stronger. I shaved off about a third of the sugar in my go-to recipe by doing that and adding a little extra vanilla. The texture stayed fine because I kept the eggs and cream cheese amounts exact.

My friend Lisa in Chicago cut the sugar in her cheesecake by 20% and swapped in a tablespoon of real maple syrup. She said it kept the creamy texture but gave it a deeper, less sugary sweet taste. Her family didn't even notice the change.
