My first macaron batch looked like alien pancakes
I read this blog post saying "just fold until the batter flows like lava" and ended up with flat, cracked discs that tasted like sweet sand. Has anyone else had a recipe description that made zero sense until you actually saw what they meant?

The lava description drove me crazy too. My first batch literally had craters on top like a bad moon surface. I ended up watching like five different YouTube videos just to see what "ribbon stage" actually looks like in real time, turns out I was way too scared of deflating the batter. The texture thing is so true though, I remember taking a bite and just getting this grainy, sugary crunch that stuck to my teeth. It took me three more tries before I realized you have to keep folding even when you think it's ready, that's when it finally came out smooth and shiny.

fold until it flows like lava" is the biggest lie in baking. My first batch looked like lumpy pancakes too. You just gotta overmix it way more than you think.
