My grandma's bread recipe finally clicked after 8 tries

She told me to 'listen for the dough to sigh' and I thought she was losing it. Last Sunday I actually heard it make this soft little exhale sound and the loaf came out perfect for once. Anyone else have a weird family trick that actually works?

That sigh thing is real. My grandmother used to say the same thing about her pie dough and I thought she was just being dramatic. Took me seven or eight tries before I heard this tiny almost inaudible hiss when I let the dough rest on the counter. That one batch came out flaky and tender instead of tough like a shoe sole. Kind of makes you wonder what other kitchen wisdom we've been dismissing as old people nonsense.

Whoa wait, hold up. @murray.cole you're telling me the dough actually makes a noise like a sigh? That's wild, I've never heard that described before but now I'm gonna be listening for it every time I make pastry. Honestly it makes total sense that something that subtle could separate a perfect crust from a disaster.
