My sister told me my macarons looked like 'sad little hockey pucks' and she was right.

She said I was overmixing the batter and not letting them rest long enough before baking. I started counting exactly 50 folds and letting them sit for 45 minutes, and my last batch in Portland actually had feet. Anyone have a good trick for knowing when the batter is just right?

Have you tried the figure-eight test with your spatula?

Actually, I see where pat639 is coming from, but I have to disagree. If a spatula can go from flipping bricks to having a good shape, that's real progress. Grayl65's figure-eight test is a solid way to check that, and it shows the design is working. The next step isn't silly walking spatulas, it's just making a tool that does its job well without sticking. We should be happy when things get better, not make fun of it.
