Ugh, test snips are a lifesaver... I had a client bring in a picture of "texture" once and it was just a photo of burlap. We had to have a long talk about hair versus actual fabric.

@parker246 Wait, did your friend actually try weighing the flour or are they just guessing? My first batch of cookies was a total mess until I saw how much extra flour I was packing into a cup. A cheap kitchen scale fixed everything.

Call that a win? You just dried out the surface and messed with the natural cooking process. The stall happens for a reason, letting fat render and collagen break down. Rushing it with a hair dryer is a hack that gives you a worse texture, even if the bark looks okay.
