My sourdough starter went from lifeless to scary in 4 days
I kept a starter alive for six weeks in Detroit and it never rose more than a quarter inch. Then I switched from tap water to filtered and fed it at the same time every morning instead of whenever I remembered. Four days later it tripled in volume and smelled like pineapple gone wrong. Now it bubbles so aggressively the jar lid pops off if I tighten it. Has anyone else had a starter flip personalities after just changing the water source?
