Paid $22 for a cheap kitchen scale and it rescued my banana bread after 3 dense loaves
For 3 straight loaves my banana bread came out like a brick and I blamed the oven, the pan, even the bananas. Then I grabbed a $22 digital scale at a Bed Bath in Tulsa and found out I was packing in almost double the flour by scooping straight from the bag. Same recipe, same oven, and the next loaf rose so high it hit the top rack. Now I weigh everything, even the butter, and my banana bread finally tastes like the kind my grandma used to make. Did anyone else fight their flour for ages before figuring out the scoop was the problem?
