Vent: My brother's 'help' with my cake always ends in a kitchen mess

He insists on mixing the batter but never follows the recipe steps, just dumps everything in at once. Last time, the layers came out dense and lumpy because he didn't cream the butter and sugar first. I love him, but his chaotic approach is why we can't have nice baked goods at family gatherings.

Does your brother also have that confident chaos where he thinks recipes are just suggestions? My aunt used to "help" by adding extra baking powder to everything, claiming it made things fluffier. We had a birthday cake once that rose so fast it cracked open like a volcano, and then collapsed into a sad pancake. She still brings it up like it was a triumph of improvisation, not a structural failure. It's hard to explain that some steps exist for a reason without sounding like a control freak. I feel your pain, because the mess is one thing, but the weird, dense results are what really get you.

My version of helping is just aggressively over-mixing everything. I'll stand there with the whisk like I'm trying to start a fire, and then wonder why the cake has the texture of a rubber tire. My poor mom still talks about the "brownie brick" I made in high school (it was supposed to be a sheet cake). Some of us just have a gift for turning simple steps into kitchen disasters.
