A pitmaster in Lockhart flipped my brisket fat side up at hour 9 and I've never gone back
Was at a small joint outside Lockhart about 2 years ago and the guy running the offset told me I had been cooking fat side down the whole time, then showed me his bark. Mine comes out way more even now, but I still can't figure out if it matters on a pellet smoker. Anyone else run fat side up on a drum or offset and notice a real difference?
Its funny how often the fix is something some old guy learned by just doing it for 30 years and not reading anything about it. Same thing happens with cars, plumbing, woodworking, you name it. The internet tells you one way is gospel and then a guy with grease under his nails flips it on you in five minutes. On a pellet smoker though I dont think it matters near as much since the heat comes from below and moves around so even. My drum runs fat up because the drippings hit the coals and that smell is half the reason I even fire it up.
