Blew $85 on a 'pitmaster class' from a guy in Kansas City who bragged about briskets but couldn't keep his offset above 225
He showed up 40 minutes late, used lighter fluid on camera, and wrapped everything in foil at the two hour mark. I asked how he handles the stall and he shrugged and said I should just buy a pellet grill instead. Anyone got a real pitmaster they actually trust to teach trim and fire management?
