I ditched my pellet grill for a stick burner after 4 years in Austin
I used to swear by my pellet smoker for brisket, thought it was the only way to get consistent results. Then I spent a weekend watching a guy named Ray at Franklin's line cook his pits and realized I was just babysitting an appliance. Switched to an offset last spring, fire management kicked my butt for the first 3 cooks, but the bark and smoke flavor are night and day different. Anyone else make that jump and feel like they were cheating themselves before?
