Lernt the hard way about fat rendering in my offset smoker
Was doing a brisket in Amarillo last July and the grease caught fire because I didnt trim enough fat, melted the probes and ruined a 80 dollar piece of meat in 20 minutes flat.

Oh man, that's rough! I feel your pain, I really do. I once tried to smoke a pork shoulder with so much fat on it I basically made a grease bomb inside my smoker. Had to put out a mini fire with a fire extinguisher and the entire neighborhood smelled like burnt hair and regret for three days. At least you got to melt your probes in style, I just ended up with a blackened chunk of meat and a puddle of grease on my patio. Makes you appreciate the simple things, like not setting your backyard on fire while trying to cook dinner.
