Overheard a pitmaster say something about brisket bark that made me rethink everything
I was at a comp in Kansas City last weekend and this old timer told his buddy 'if your bark ain't set before the stall, you already lost.' Took me a minute to realize he meant the moisture from the stall will wash out the bark if it ain't locked in first. Has anyone else found that timing makes or breaks your bark?

Wait, are you telling me all those times I wrapped my brisket and found a soggy, sad mess that I was the one messing up, not the meat? I spent a whole summer chasing that perfect bark and kept getting a crust that looked like it went swimming then got hit with a hair dryer. Guess I should have paid MORE attention to the smoke before the stall instead of just staring at my grill like it owed me money.

I read somewhere that wrapping too early traps steam and basically washes the bark right off the meat.
