I finally saw a bindery in Toledo that does things backwards

Went to a small shop in Toledo last month and they glue spines before they trim the text block. Everyone I know trims first, but they swear it keeps the pages from shifting. I watched them do three books and honestly the edges came out cleaner than mine. Am I missing something or is this just a regional habit that actually works?
