I tried making my own chicken stock versus buying the boxed stuff

I saved the bones from a $7 rotisserie chicken and simmered them with veggie scraps for about four hours. The flavor was so much richer than the watery stuff in the carton, and it cost basically nothing. Has anyone else found that a little extra time makes a huge difference for cheap meals?

Wait you paid seven bucks for a rotisserie chicken? That's wild, the ones at my store are like five dollars tops. Anyway yeah homemade stock is a total game changer, it makes your whole kitchen smell amazing too. I freeze mine in old yogurt containers so I always have some ready.

Actually that higher price often means better quality chicken without added water or salt. The cheaper ones can be pumped full of broth to make them seem bigger, so you're paying for water weight. Homemade stock from a good bird has a richer flavor that's worth the extra couple dollars. Freezing it is smart, but starting with a better base ingredient makes all the difference.
