My mom said something about rice and beans that I keep thinking about
My mom called me three weeks ago while I was meal prepping for the week and I told her I was making chicken and rice again because it costs me about $1.80 a serving. She laughed and said she fed me and my two brothers on rice and beans for most of the 90s and nobody ever complained, so why do I act like cheap food is a punishment? That hit me because I'd been spending $60 a week on groceries trying to make "interesting" meals when a bag of dried pinto beans is $2.50 and makes eight servings. Since then I've done black beans with cumin and a fried egg over rice for dinner four nights a week and I'm saving around $30 a week. Does anyone else have a parent who made them feel dumb for overcomplicating cheap food?
