My neighbor swore by using powdered milk in cooking to save cash

I tried it in a potato soup recipe from a church cookbook and honestly couldn't tell the difference from fresh. Has anyone else found a surprising ingredient swap that actually works?

Ever try using applesauce instead of oil in boxed cake mixes? I did it once when I was totally out of oil and it made the cake super moist. I get what @haydensanchez is saying about texture being a dealbreaker, but some swaps just work. That one felt like a win, not a cheap trick.

Is saving a couple bucks really worth the weird texture? I've tried it and the mouthfeel is off even if the taste is close. Seems like a corner not worth cutting to me.
