The $4 rotisserie chicken at Costco changed my whole meal prep game
I was at the Costco on 4th Street in Louisville last Tuesday and grabbed one of those $4.99 rotisserie chickens on a whim. Got home, pulled all the meat off, and realized I had enough chicken for 4 dinners plus a batch of soup from the bones. Now I buy two every trip and stretch them across the week instead of buying raw chicken breasts for $12. My grocery bill dropped from $140 to about $95 a week. Does anyone else do the rotisserie chicken thing, and what are your go-to meals with the leftovers?
The 4th Street Costco is my go-to too, those birds are stupid cheap for what you get. I usually do chicken tacos one night, then throw the rest in a pot with some rice and frozen veggies for a quick soup. Pro tip, save the bones in a ziplock in the freezer until you have two or three, makes way better broth that way.
