Customer said my lamb chops looked like bark, fair point

Some guy in Tulsa on Saturday told me my frenched racks looked like tree bark because I was leaving too much silver skin. Spent Sunday timing my trimming with a timer, now I take 4 minutes per rack instead of 2, and the difference is night and day. Anyone else get roasted by a customer and actually fix their process off it?
