My rice game completely changed after I stopped rinsing it
I used to always rinse my rice until the water ran clear because my grandma said that's how you do it. Then I switched to jasmine rice from the bulk bin at my local co-op in Cleveland and forgot to rinse it one night about 3 months ago. The texture was way fluffier and it actually held together better in my stir fry. Has anyone else noticed a difference skipping the rinse, or am I just getting lucky with the brand?

Yeah "it held together better in my stir fry" is the real key here. Most of the stickiness people worry about actually comes from the starch coating getting gummy not from the excess starch you rinse off. Skipping the rinse lets that starch do its job and bind the grains together so they don't just fall apart when you toss them around.
