My sous chef told me to stop flipping my fish so much
He kept yelling at me to just let the salmon sit for 4 minutes straight without touching it. I always thought I needed to keep moving it around the pan, but I tried his way last Tuesday and got the best crust I've ever had. Has anyone else been doing fish wrong their whole career?

@gonzalez.rowan nailed it, I used to be terrified of the pan getting too hot and just let it ride.

Isn't the real issue that we're all just scared of leaving food alone in a hot pan because we think it's gonna burn, not that we actually know what we're doing?
