I finally tried the $18 plastic V60 after 9 years of metal cones and I was wrong about it
I bought a Hario V60 around 2016 and kept breaking the ceramic ones, so I switched to a steel Kalita and never looked back. Last month a barista at a shop in Portland handed me a plastic V60 to brew with and I told her it felt like a toy, but she just said try the same dose and water and see. The cup was cleaner and the heat stayed steady because the plastic doesn't suck warmth out like the steel does, and my brew dropped from 3:15 to 2:45 with the same grind. Now I want to know if anyone else switched from metal to plastic for the temp reason or if I'm just late to this.
