PSA: quit telling new guys to use all-purpose mud for the whole job

I watched a helper in Tulsa spend 6 hours coating a whole garage ceiling last Tuesday with the green bucket stuff, and every joint still flashed when the sun hit it the next morning. Buying a $18 bag of topping mud for the last coat would have saved him the rework, so why does half this trade still act like one bucket does everything? What mud do you guys actually run on final coats these days?
