Appreciation post: My one-pan dinner shift
I thought good meals needed multiple pots. A simple sheet pan recipe proved me wrong.

I always figured I needed a whole kitchen's worth of dishes for a decent meal. Now I just see a sink full of pans and think about all the time I wasted washing them. The one-pan life is a quiet rebellion against my own past stupidity.

That "quiet rebellion" phrase really sticks with me. What was the moment you realized your old way was stupid? I mean, was it just the pile of dishes or something else that flipped the switch for you.

Oh man, I have to disagree a little here. For me, @oliviaellis, it wasn't one big moment. It was more like a slow, annoying drip. I kept buying the fancy kitchen gadgets and the special pans for one job. Every time I had to clean or store that junk, I felt a little more tired. The pile of dishes wasn't the switch, it was the final proof I'd been making things hard for no good reason. Now my quiet rebellion is just using the same old pot for almost everything.
