Appreciation post: my sister-in-law's 15 minute sausage and bean skillet got me through a rough Tuesday
Last Tuesday I got home at 6:45 after a long day and almost ordered pizza again. My sister-in-law was over helping with the kids and just grabbed a can of white beans, a package of kielbasa, and a bag of frozen spinach from my freezer. She sliced the sausage, browned it in my cast iron for about 5 minutes, dumped in the beans and spinach with a splash of chicken broth, and it was done in 15 minutes flat. I had seconds and my picky 8 year old actually asked for more. What are your go to meals when you have basically nothing in the fridge and no energy left?
The real hero here is your sister-in-law knowing where stuff is in YOUR kitchen (mine would just stand there opening cabinets while I slowly lose my mind on the couch). But here is the thing nobody talks about with these pantry meals, the cast iron does half the work. That fond from the sausage is basically free flavor and you would never get that from a sheet pan or a nonstick pan. Same trick works with a can of chickpeas and a bag of frozen kale, or leftover rice and an egg if you time it right. The 15 minutes is real but only if the pan is already hot, so I started leaving mine on the stove after I wash it.
