Swapped frozen veggies for fresh and my stir fry game changed completely
I used to always grab a bag of frozen mixed veggies for stir fry nights because it was just easier. But after seeing my coworker Lin bring in this crazy colorful lunch every day I finally asked her about it. She told me she chops up fresh broccoli, bell peppers, and snap peas the night before and keeps them in a glass container. I tried it last Tuesday with some chicken and soy sauce and the texture difference is insane - no more soggy carrots or limp green beans. It only takes maybe 10 extra minutes of prep and the veggies actually stay crunchy and taste way better. My husband even asked if I got takeout because it looked that good. Anyone else make the switch and never look back?

Used to be a frozen veggies loyalist myself, mainly because I thought fresh would go bad before I used it all. But @gray_nelson is right about the texture thing, once I actually tried fresh broccoli and bell peppers in a hot wok, the frozen bag stuff just can't compare. The snap peas stay snappy instead of turning into rubbery little strings, and the color difference is huge. Now I just prep a big batch of chopped veggies on Sunday and pull from that all week, they hold up fine in the fridge. My stir fry nights went from a boring weeknight meal to something I actually look forward to. Even the mushrooms get that nice sear instead of steaming in their own water.

Dude I heard this exact thing on a cooking podcast last week and it's been bugging me ever since lol. The host was saying how frozen veggies get that weird texture because they're basically parboiled before freezing, so they're already kinda cooked before they hit your pan. I tried switching up my stir fry with fresh bok choy and water chestnuts and yeah the crunch is just next level. Even the color stays way more vibrant, like not that dull greyish green you get from the bag. The only thing I still use frozen for is peas since they're small enough to not get mushy.
