Remember when food trucks were just hot dogs and pretzels?
I was reading an article about how the first gourmet truck in my city, The Rolling Fork, started in 2008 with just a $5 pulled pork sandwich. Now the same spot has a line for $15 duck confit tacos. It's wild how the whole scene leveled up from simple street food to full restaurant menus on wheels. Anyone else miss when finding a good truck felt like a cheap, simple win?

Okay but "small loan for a taco" is a bit much. I just checked the place by my work and a basic taco is like four bucks. It's more than it was, sure, but calling it a loan feels like we're making it a bigger deal than it is. Prices go up on everything, not just lunch. It stinks but it's not some crazy new thing.
