Warning: My mom's secret for fluffier pancakes isn't what you think
I used to make dense pancakes until my mom shared her trick. She adds a little bit of club soda to the batter instead of all milk. In my experience, this makes them light and airy every time. Your mileage may vary, but it's worth a try. Take this with a grain of salt, but it's been a game-changer for our weekend breakfasts.

Heard something similar about using carbonated water in batter for waffles too. Makes sense it would work for pancakes the same way. Might give that a try next weekend.

Actually that carbonated water trick is way more key for pancakes than waffles. Waffles get their lift from the iron pressing them, but pancakes need all the help they can get. Maybe it's just me but using something like seltzer makes them crazy fluffy, like diner style. Kinda what @white.lisa might need for a legit exciting weekend breakfast. Idk, flat batter just leads to sad, dense pancakes.
