Air fryer wings went from trash to perfect in 2 years

I remember my first batch in 2019. Rubbery skin, dry meat, total waste of chicken. Fast forward to last week, same air fryer, same recipe site, totally different result. The difference? I finally figured out patting the wings dry and tossing them in baking powder. Has anyone else had that learning curve with something simple like that?

Oh man, the baking powder trick was a total game changer for me too. Took me like 15 sad batches before I realized I was just skipping the drying step and wondering why they came out soggy. Now I leave them uncovered in the fridge overnight and it's night and day difference.

Patting dry and overnight uncovered fridge rest was my turning point too, 18 failed batches before I wised up. Now I dust with cornstarch instead of baking powder and they crisp up even better.
