I thought Sourdough Starter Discard Recipes Were a Gimmick
For a year I refused to try any of those discard crackers or pancakes. I just tossed the extra starter in the compost every time I fed it. Then my friend Sarah at the farmers market in Portland gave me her chocolate chip discard cookie recipe after I complained about waste. I baked a batch last Tuesday and they were actually fluffier and more flavorful than my regular cookies. Has anyone else been surprised by a discard recipe they didn't expect to work?

Oh man, the chocolate chip discard cookies are legit a game changer. I was skeptical too until I tried a similar recipe from my neighbor and now I basically hoard discard for baking. The tanginess just adds something extra that regular cookies don't have, like a hint of sourdough depth without being overpowering. Honestly, I've started swapping discard into banana bread and even waffles and everything comes out way more tender with a better crumb. Ngl, I'm mad at myself for all that starter I wasted before discovering this.

Hold up, did you have to mess with the liquid amounts much when you started swapping discard into waffles? I tried it once and my batter came out way too thick and the waffles were kinda dense. Maybe I'm just not adjusting right for the hydration difference.
