PSA: Check your oven thermometer, I lost $60 of butter and 3 hours last Saturday
Last Saturday I was doing a big croissant batch for a friend's baby shower in my kitchen in Sacramento, and everything felt off from the start. My oven dial said 375 but the croissants were browning on the bottom way too fast while the middles stayed raw. I finally grabbed my old dial thermometer and it read 425, so the oven had been running 50 degrees hot this whole time. I tossed two trays and about $60 worth of butter and dough, and had to start over at 9pm. Has anyone else had a dial drift this bad, and do you trust the cheap thermometers or spring for the $40 ones?
