My grandma’s banana bread recipe came out like a brick today

I tried making her old recipe that I used to love as a kid, but I swapped the baking soda for baking powder by accident. It rose way too fast then collapsed into this dense, weirdly salty lump that barely fit in the pan. Has anyone else messed up a swap like that and figured out a fix for next time?

Oh man, that's rough. I've definitely been there with baking swaps gone wrong. One time I used buttermilk instead of regular milk in a cake and it came out like a sour, dense hockey puck. For your banana bread, the saltiness is probably from the extra sodium in baking powder compared to baking soda. Next time, just stick with the original amounts and maybe try cutting the salt back a tiny bit if you're worried. But honestly, your grandma's recipe probably worked fine for decades, so it's probably just that one swap that threw everything off.

Honestly, that buttermilk cake sounds like a crime scene.
