My mom's comment about my sourdough starter finally clicked
I was visiting my mom last weekend and she said my bread tasted 'rushed' which stung because I spent 3 hours on it. She meant my starter wasn't mature enough, I've only been feeding it for 2 weeks. Has anyone else had a family member just nail the problem with one blunt sentence?

@milap35 nailed it, give that starter three weeks more feeding time... it'll mellow right out.

Heard this same thing from my buddy Rick when he tried smoking ribs for the first time. His dad took one bite and said "you didn't let the smoke settle" which meant his temp was all over the place. Took him three more tries to get it right, but that one sentence saved him months of guessing.
