I thought the whole 'wrap your brisket in butcher paper' thing was just for show

Honestly, I was sure foil was fine and the paper was just a gimmick for TV. Then I tried it on my last cook and the bark stayed perfect, not soggy at all. Anyone else switch from foil and have it actually make a difference?

My buddy Tom from down the street did that exact thing. Wrapped his brisket in foil for the whole cook and it came out like a science experiment. He said the bark turned into this weird soggy paste and you could scrape it off with a fork. Now he swears by unwrapped for the first few hours and only wrapping in paper after the stall. That brisket was a tough lesson but he says it taught him more than any Youtube video ever did.

Foil can be a real crutch sometimes. My neighbor swears by butcher paper now after his last one turned into a steamed mess. He said it was like eating a pot roast that forgot it was supposed to be brisket. That kind of thing just makes you want to fire up the smoker again right away.
