My old offset smoker finally gave up the ghost last weekend, right in the middle of a 14-hour brisket cook.

I used to hate pellet grills but that would change my mind.

My buddy swore by charcoal for years. He finally tried a pellet grill for a brisket last summer. The thing held perfect temp for 14 hours straight, noah_walker16. He sent me a picture and it looked insane. Never heard him complain about pellets again.

Gotta jump in here real quick though - @noah_walker16, that brisket picture might've looked insane but pellet grills don't really give you the same smoky flavor as charcoal or wood. I mean, they're super convenient for sure, but that bark and smoke ring you get from burning actual wood chunks or charcoal is hard to beat. My buddy switched to a pellet grill for his ribs and he said they came out tasting more like an oven bake than a real BBQ.
