PSA: I called offset smokers overrated for 3 years until a brisket at the American Royal shut me up
I always ran a cabinet smoker and figured stick burners were just for guys who wanted to babysit fire all night. Then my buddy Dale from Wichita let me run his 500 gallon rig at a comp, and the bark on that brisket came out so much better than anything off my cabinet that I ate my words at the table. Anybody else here switch styles after tasting the difference for yourself?
Not sure a comp rig with a 500 gallon tank is really the same thing as a backyard offset though. Those big pits hold heat and draft way different than the $300 one most guys start on. Stick burners can turn out great brisket, but the gap you tasted might've been Dale's rig more than the style itself.
A backyard offset can hold temp just fine if you learn to manage the fire, plenty of guys win contests on cheap drums and little 55 gallon smokers. Dale could've cooked that same brisket on a rusty $200 rig and it would still beat the pellet one, because the guy running the pit matters way more than the tank size. Those $300 offsets leak like crazy and need mods, but once you seal em up and add a baffle they'll run steady for hours. At some point the gap stops being about the smoker and starts being about who's feeding sticks every 30 minutes and reading the fire right, and most folks just don't want to do that work lol.
