I just spent only $42 on groceries for a full week of dinners
I tracked every penny for my last shopping trip at the local Food Fair. I got a whole chicken, a big bag of rice, some dried beans, frozen veggies, and a few onions and potatoes. I roasted the chicken first night, used the bones for soup the next day, and stretched the meat into tacos and a casserole. I was sure I'd need to go back for more food, but I made it all the way to Friday without another store run. It really showed me how much further a few basic items can go if you plan it right. Has anyone else had a week where their food budget came in way lower than you thought it would? What was your game plan?

My cousin in Ohio had a similar thing happen last month, but with a snowstorm. She was stuck with what she called her "apocalypse pantry," just a bag of lentils, a can of tomatoes, and some spices. She made a huge pot of soup that lasted four days and said it was weirdly the best food she'd eaten all winter. It wasn't really about the budget for her, more about being forced to use what was already there. Your chicken plan reminds me of that, making one thing work for a bunch of meals.
