You mentioned oak being a "drama queen," but I gotta say, I've been using it for years without much trouble. Maybe I'm just lucky or I use smaller screws, but I've driven plenty right into red oak without splitting anything. A little muscle and a decent drill bit seems to do the trick if you're careful about the angle. I think people overreact sometimes, you know? It's wood, not glass.

Was the door handle one of those round knobs that just spins freely? I had the same thing happen in a hostel in Budapest two years ago. I started carrying a small multi-tool in my daypack ever since, and it saved me when a shower faucet handle came off in my hand. For the door issue specifically, I learned to always check if the lock has a little slot on the outside where you can poke a coin or a keycard to pop it open. That trick got me out of a sticky situation in a guesthouse in Krakow once.

Filtered water instead of tap" seems like a stretch. Tap water in most cities has chlorine that evaporates if you let it sit out overnight, and that's usually fine for starters. More likely your starter just hit its natural stride around day 16, which is pretty standard for a rye blend anyway.
