Unpopular opinion: Meal prepping on Sundays is a waste of time

I used to spend 4 hours every Sunday batch cooking everything for the week, but now I just prep ingredients like chopped veggies and cooked rice in 45 minutes and throw meals together on the fly. When did we all decide that eating the same boring casserole for 4 days straight was the only budget way to do this? Anyone else scaled back their Sunday prep and still saved money?

Oh man, I tried the full Sunday meal prep once and ended up throwing half of it out by Wednesday because I couldn't stomach another serving. Do you find you actually eat healthier when you just prep the basics instead of full meals?

My buddy Mike tried the full Sunday meal prep thing and it backfired hard. He made this huge batch of chicken and quinoa bowls on a Sunday, by Tuesday he was ordering pizza because he couldn't look at another quinoa bowl. What really got him was when his girlfriend opened the fridge, saw the stack of Tupperware, and said "you've got a sad desk lunch situation going on in here." Now he just chops his veggies on Sunday and cooks the rice, then throws together stir fries or salads during the week. He actually eats healthier now because he's not forcing himself to choke down five-day-old chicken for dinner.
